INGREDIENTS

  • 12 ounces baby spinach
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice , to taste
  • 1 teaspoon salt (optional)
  • 1 teaspoon walnuts (optional)or pecans (optional)

DIRECTIONS

  1. Add spinach to boiling water.
  2. Cook 1 minute.
  3. Drain; squeeze off all excess water.
  4. Toss with oil and salt.
  5. Add lemon juice; toss again.
