INGREDIENTS

  • 1 cup of lukewarm water
  • 6 tablespoons of lukewarm water
  • 2 tablespoons orange juice
  • 4 tablespoons canola oil
  • 3 tablespoons honey
  • 1 cup old fashioned oats
  • 1 cup whole wheat flour
  • 1 1/2 cups unbleached all-purpose flour
  • 1 1/4 teaspoons salt
  • 3 tablespoons potato flour
  • 1/4 cup oat bran
  • 1/4 cup nonfat dry milk powder
  • 2 1/4 teaspoons instant yeast

DIRECTIONS

  1. Combine all of the dough ingredients, mix and knead them by hand until you have a soft and smooth dough. Cover and allow the dough to rise until it’s quite puffy, though probably not double in size. from 1 to 2 hours.
  2. Gently deflate the dough, and transfer it to a lightly greased work surface. Divide it into 16 pieces. Shape each piece into a rough ball.
  3. Place the rolls in a baking pan covered with partchment paper. Space the rolls so that they won’t touch each other.
  4. Cover the pan with lightly greased plastic wrap and allow the rolls to rise for another 1 to 1 1/4 hours. They won’t double in size.
  5. Uncover and bake the rolls at 350 degres F until they’re golden brown on top but still ligth colored on the sides, about 25 minutes.
  6. Remove them from the oven, and after 3-4 minutes transfer them to a wire rack to cool.
