INGREDIENTS
- 1 cup of lukewarm water
- 6 tablespoons of lukewarm water
- 2 tablespoons orange juice
- 4 tablespoons canola oil
- 3 tablespoons honey
- 1 cup old fashioned oats
- 1 cup whole wheat flour
- 1 1/2 cups unbleached all-purpose flour
- 1 1/4 teaspoons salt
- 3 tablespoons potato flour
- 1/4 cup oat bran
- 1/4 cup nonfat dry milk powder
- 2 1/4 teaspoons instant yeast
DIRECTIONS
- Combine all of the dough ingredients, mix and knead them by hand until you have a soft and smooth dough. Cover and allow the dough to rise until it’s quite puffy, though probably not double in size. from 1 to 2 hours.
- Gently deflate the dough, and transfer it to a lightly greased work surface. Divide it into 16 pieces. Shape each piece into a rough ball.
- Place the rolls in a baking pan covered with partchment paper. Space the rolls so that they won’t touch each other.
- Cover the pan with lightly greased plastic wrap and allow the rolls to rise for another 1 to 1 1/4 hours. They won’t double in size.
- Uncover and bake the rolls at 350 degres F until they’re golden brown on top but still ligth colored on the sides, about 25 minutes.
- Remove them from the oven, and after 3-4 minutes transfer them to a wire rack to cool.
