INGREDIENTS

  • 1 (28ounce)can diced tomatoes
  • 1 medium sweet onion
  • 1 large jalapeno pepper
  • 1 garlic clove
  • 1 lime, juice of
  • 1/4 bunch fresh cilantro
  • salt
  • pepper

DIRECTIONS

  1. Finely dice onion by hand.
  2. Chop jalapeno and garlic in food processor, then add cilantro and lime juice and process, then add diced tomatoes. Mix in chopped onion and salt and pepper. Chill for several hours or over night for flavors to blend.
