INGREDIENTS

  • 4-5 cucumbers (8-10 inch)
  • 1/2-1 sweet onion
  • 1jalapeno, seeds and membranes removed
  • 2 stalks celery
  • 1/2 cup sour cream , to taste
  • salt and pepper
  • 1-2 tablespoon chopped parsley (optional)
  • sunflower seeds (to garnish) (optional)

DIRECTIONS

  1. Peel and dice cucumbers. (Leave skins on if they’re unwaxed, garden cukes).
  2. Quarter onion and slice paper-thin.
  3. Mince jalapeno.
  4. Cut celery in 1/4" dice.
  5. Toss all veggies together with sour cream and seasonings.
  6. Garnish with sunflower seeds if desired.
