INGREDIENTS

  • 2 lbs broiler-fryer chickens
  • 3 garlic cloves (peeled)
  • 2 teaspoons salt
  • 1/4 cup oil
  • 1 teaspoon pepper
  • 3 tomatoes (chopped)
  • 1 onion (chopped)
  • 1serrano pepper (chopped)
  • 3 bay leaves (crushed)

DIRECTIONS

  1. Place chicken, garlic, and salt in pot; cover with water and boil until tender.
  2. Skin, bone, and shred chicken and place in skillet with oil; saute.
  3. Add remaining ingredients; simmer about 10 minutes, covered.
  4. Serve with Spanish rice and refried beans.
