INGREDIENTS

  • 1 medium tomato , cut into 6 slices
  • 1/2 cup chopped cucumbers
  • 1/8 teaspoon salt
  • 1 1/2 teaspoons fresh basil or parsley , choppped fine
  • 1 teaspoon grated lemon rind
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar (no other)

DIRECTIONS

  1. Place tomato on two plates and put cucumber on top. Sprinkle with salt.
  2. Mix remaining ingredients in a small bowl with a whisk.
  3. Drizzle over tomato and cucumber. Let stand 5 minutes before serving.
  4. You might try other fresh herbs to see what else might work for your taste.
