INGREDIENTS
- 1 medium tomato , cut into 6 slices
- 1/2 cup chopped cucumbers
- 1/8 teaspoon salt
- 1 1/2 teaspoons fresh basil or parsley , choppped fine
- 1 teaspoon grated lemon rind
- 1 teaspoon sugar
- 1 tablespoon balsamic vinegar (no other)
DIRECTIONS
- Place tomato on two plates and put cucumber on top. Sprinkle with salt.
- Mix remaining ingredients in a small bowl with a whisk.
- Drizzle over tomato and cucumber. Let stand 5 minutes before serving.
- You might try other fresh herbs to see what else might work for your taste.
