    Ingredients for salsa
  • 1 (14 1/2ounce)can corn , drained
  • 1/2 cup diced red onions
  • 1/4 cup diced red bell peppers
  • 1jalapeno pepper, finely chopped
  • 1 (14 1/2ounce)can black beans , drained & rinsed
  • 1 large avocado , diced
  • Ingredients for Dressing

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup fresh cilantro , chopped (optional)

DIRECTIONS

  1. In medium bowl, mix first 5 ingredients of the salsa mixture.
  2. Mix dressing ingredients in blender or food processor.
  3. Pour dressing mixture over salsa mixture and toss lightly.
  4. Just before serving, add in avocado & toss again.
  5. Serve with "scoops" chips.
