INGREDIENTS
Crust
- 6 tablespoons butter , melted
- 1 3/4 cups graham cracker crumbs
- 1 teaspoon cinnamon
- 3 tablespoons sugar
Filling
- 3 (8ounce)packages cream cheese
- 1 cup sugar
- 3 eggs
- 1/2 teaspoon vanilla
Topping
- 1 pint sour cream
- 3 tablespoons sugar
- 1/2 teaspoon vanilla
DIRECTIONS
- Mix all ingredients for the crust and press into the bottom and up the sides of a spring-form pan.
- Beat the cream cheese with a mixer until smooth. Add the sugar gradually and then the eggs, one at a time, followed by the vanilla. Mix well.Pour into the pan and bake at 375 degrees farenheit for 20 minutes. Remove from the oven and turn the oven up to 500 degrees.
- Beat the sour cream until lightly fluffy. Add the sugar and vanilla. Pour on top of the cheesecake and bake in the oven for an additional 5 minutes.
- Let cool in the pan overnight in the refrigerator.
