INGREDIENTS

    Crust
  • 6 tablespoons butter , melted
  • 1 3/4 cups graham cracker crumbs
  • 1 teaspoon cinnamon
  • 3 tablespoons sugar
  • Filling

  • 3 (8ounce)packages cream cheese
  • 1 cup sugar
  • 3 eggs
  • 1/2 teaspoon vanilla
  • Topping

  • 1 pint sour cream
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla

DIRECTIONS

  1. Mix all ingredients for the crust and press into the bottom and up the sides of a spring-form pan.
  2. Beat the cream cheese with a mixer until smooth. Add the sugar gradually and then the eggs, one at a time, followed by the vanilla. Mix well.Pour into the pan and bake at 375 degrees farenheit for 20 minutes. Remove from the oven and turn the oven up to 500 degrees.
  3. Beat the sour cream until lightly fluffy. Add the sugar and vanilla. Pour on top of the cheesecake and bake in the oven for an additional 5 minutes.
  4. Let cool in the pan overnight in the refrigerator.
