Offer this Italian cornmeal side dish in place of potatoes or rice. It’s best served immediately out of the oven.

INGREDIENTS

  • 2 13 3/4-ounce cans low-salt chicken broth
  • 3/4 cup yellow cornmeal
  • 5 strips bacon, cooked, crumbled (optional)
  • 1/4 cup plus 2 tablespoons grated romano
  • 3 tablespoons butter
  • 1/2 teaspoon pepper

    DIRECTIONS

    Whisk together broth and cornmeal in large bowl. Cook in microwave on High until thickened, about 15 minutes, whisking every 5 minutes to combine. Stir in bacon, Romano, butter and pepper and serve.
